The semi-industrial SME bakery Boulangeries Pâtisseries Associées Nantes was established in 1996 and has been active ever since in the production of partly baked and baked pastry products (e.g. baguette, ciabatta, etc.). Today PBP is recruiting 70 employees, has six bakeries all situated in western France and delivering approx. 1500 costumers daily.
Being a member of a collaborative research program on salt reduction and being involved in other initiatives concerning waste reduction and energy consumption, BPA is highly interested in this project. As it wants to improve its baking systems and also be able to implement new technologies in its future investments aiming products with a better quality and energy savings.
